Cranberry Gingerbread Cake

Gingerbread Cake with Cranberries

Holiday Gingerbread Cake w. Cranberry Filling

  • 2 cups flour
  • 2 ¾ cups finely ground
  • almonds (loosely packed)
  • 1 cup sugar
  • 2 teaspoons Gingerbread
  • Spice # 3 (recipe page 43)
  • zest and juice of one lemon
  • 1 tablespoon vanilla
  • 1 cup butter
  • 2 eggs
  • wafers or hosts to cover
  • 10 ½ inch cake
  • 1 ½ cups – 2 cups cranberry/raspberry sauce (page 48)
  • Egg wash of egg yolk
  • and a little milk
  • Icing sugar for dusting cake

In a food processor combine flour, almonds, sugar, spice, lemon, vanilla and blend until well combined. Blend in the butter briefly until a grainy consistency is achieved. Add the eggs to form a dough.

Line bottom and sides of a 10 ½ inch in diameter with baking paper (cut a round for the bottom and a long sleeve for the sides). Butter and flour paper. Fill in 2/3 of the dough, pressing down evenly with wet fingers. Cover dough first with hosts, then with cranberry/raspberry sauce. Take remaining 1/3 of dough. Divide in half.

Out of one half form a long roll to go around the outside of the cake. Roll out remaining dough and cut out stars and one Christmas tree with cookie cutters. Arrange stars on the cake. Brush with egg wash and bake at 300/325 F for about 45 minutes to one hour. Let cool. Bake Christmas tree cookie separate. Dust with icing and set onto the middle of the cake.
