Viennese Baked Crepes are my favorite gourmet breakfast casserole.

Viennese Crepes

Baked Viennese Crêpes with Quark Filling

“Quark” is the German name, “Topfen” the Austrian name for this particular baking cheese. Here in North America you can either buy it by the name of “Quark” or by the name of “Baking Cheese”. It looks like sour cream but the consistency is more like creamed cottage cheese. In this recipe you can also use cottage cheese. It is less expensive and there is really not that much difference in taste.

Filling:

1 package quark (250 grams) or

250 grams of full fat cottage cheese

½ teaspoon vanilla

1 tablespoon sour cream

1 tablespoon heavy cream

Grated peel of ½ lemon

¼ cup raisins

Prepare crepes following the crepe recipe.

Prepare filling by placing cottage cheese in a food processor. Process until smooth, add remaining ingredients, except raisins. Blend quickly together without over processing. Spread 2—3 tablespoons of filling onto each crepe, sprinkle with a few raisins and roll up. Set 2 crepes into each of the four individual porcelain baking boats. Add 1 egg yolk and 2 tablespoons of heavy cream to the remaining filling, stirring it together well. Pour equal amounts onto each portion and bake in a 350 F oven until golden on top. Line an oval plate with doilies, set the boat on top, sprinkle with icing sugar, place whipped cream on top and decorate with chocolate sprinkles or fresh flowers.
